Sardinian Cooking Class in Cagliari: Making Culurgiones with a Local Host

The answer first. The Sardinian Cooking Class with Meal and Drinks costs €89.50 per person, lasts 3 hours and holds a perfect 5.0 stars from 98 reviews. It is a hands-on class in one dish, culurgiones, followed by a sit-down meal. If you want a general tasting of Sardinian food rather than one pasta, look at a food tour instead.

What happens

The host is Damiano, with his sister, and the booking page says he learned the recipe from his grandmother. You get a container called a scivedda, are shown how the pasta is made, prepare the filling and taste the ingredients. Then you work the dough, which has been left to rest, and learn the method for closing each one.

When the pasta is shaped, everyone sits down. The page lists an aperitif with local cheeses and cold cuts, then your culurgiones served with two toppings, with water, wine and a digestif. The short description also mentions dessert. The class is limited to 8 participants.

What culurgiones are, and a caveat

Culurgiones are stuffed pasta from Ogliastra, in the east of the island. The best-known version is filled with potato and pecorino with mint, and since 2015 culurgionis d’Ogliastra has had protected geographical indication status. The booking page says the recipe taught here is the one from the town of Jerzu, and that each area has its own version. So this is a Sardinian class held in Cagliari, not a class in the city’s own dish. That is no reason to skip it, but it is useful to know if you want the cooking of Cagliari itself.

Practical details

  • Languages: English and Italian. The page says that for French you should write to the operator at least 7 days before.
  • Not allowed: according to the booking page, children under 7 and pets.
  • Hygiene: guests wash their hands and wear aprons, and gloves if needed.
  • Food intolerances and vegetarian needs: tell the operator by the number on the booking voucher. Do not assume the filling can be changed on the day.
  • Accessibility: the page marks the class as wheelchair accessible. Confirm the details with the operator before you book, especially the access to the room.
  • Meeting point: read it on the booking page after you choose a date.
  • Cancellation: free up to 24 hours before.

Cheaper, dearer, or different

A private class at a local home exists too, at €145 per person for three hours, but it has no reviews on the booking page yet, so there is nothing to compare. If you want to eat more than you cook, the page for food and wine tours in Cagliari has 29 offers from €30. The underground tour offers a food and wine tasting as an add-on to the walk, which suits visitors who want one outing instead of two.

A class like this works well on a rainy day. It does not work for visitors who dislike group activities, because a table of up to eight people is part of the point.
